# How to Make It:

01 - Preheat oven to 425°F.
02 - Toss diced sweet potatoes with olive oil, salt, and pepper. Spread on baking sheet and roast for 20-25 minutes, turning halfway through, until golden and tender.
03 - Bring water and salt to boil in saucepan. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand covered for 5 minutes. Fluff with fork.
04 - In bowl, toss chicken pieces with olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper until evenly coated.
05 - Heat large skillet over medium-high heat. Add chicken and cook for 6-8 minutes, stirring occasionally, until golden and cooked through. Transfer to plate.
06 - Combine shredded cabbage, julienned carrot, apple cider vinegar, olive oil, honey, salt, and pepper in bowl. Toss thoroughly and let sit for at least 10 minutes.
07 - Whisk together honey, Dijon mustard, hot sauce, apple cider vinegar, and olive oil in small bowl until smooth. Season with salt and pepper to taste.
08 - Divide cooked quinoa among four bowls. Top each with roasted sweet potatoes, cooked chicken, and red cabbage slaw. Drizzle generously with hot honey mustard dressing and serve immediately.

# Expert Tips:

01 -
  • The hot honey dressing is genuinely addictive and makes everything taste like you spent way more time cooking than you actually did.
  • Everything cooks simultaneously, so you're not standing over the stove for hours on end.
  • It's naturally high in protein and packed with vegetables, which means you can eat a huge, satisfying portion without feeling guilty.
02 -
  • Don't overcrowd the skillet with chicken or it will steam instead of sear, so give it space and work in batches if you need to.
  • The hot honey dressing is forgiving and actually tastes better the next day once flavors have melded, so make it ahead if your schedule allows.
03 -
  • Make the dressing the night before so the flavors meld and deepen, which means you'll spend less time in the kitchen and more time actually eating.
  • If you can't find good smoked paprika, regular paprika plus a pinch of liquid smoke creates a similar effect that works beautifully.
